Coldfil Cake

Egg 500g
Sugar 320g
Cake flour 400g
CPT Stabili 50g
Pronto 60g
Aristo all purpose(melted) 250g
Spido baking powder 10g
Cake weight 1590g

Paste from the formula 300g
Puratos Coldfil 200g
Filling weight 500g
Total weight 2090g

Recipe

Cake making method:

  1. Mix the egg and sugar at middle speed in 1 minute;  and then sieve the cake flour, CPT stabil and baking powder and mix all in low speed until evenly;  later put the Pronto into the mixture and stir them at high speed in 2 minutes;  latest we will add the Aristo all purpose by several times until thoroughly.
  2. Take out 300g paste from above mixture and mix with 200g LF Coldfil, ready for use.
  3. Pipe the paste into the cake mould (only half of the mould), and then pipe the filling by stripe into the cake mould.
  4. Baking temperature: top at 190℃, bottom at 180℃, about 20 minutes.
