Easy Multicereal Toast

| Water | 480g |
| Yeast | 15g |
| Salt | 10g |
| Sugar | 80g |
| Egg | 150g |
| Puratos Easy Multicereal | 300g |
| S 500 | 10g |
| Aristo all purpose | 80g |
| Total bread weight | 1825g |
Recipe
- Mix all the ingredients (except Aristo) together at low speed then add the butter and mix at high speed until well developed.
- First fermentation: 20'.
- Divide, scale and mould round.
- Rest: 15'.
- Shape the dough piece into a toast mould.
- Final proofing: 100' at 38℃, 75%RH.
- Baking temperature: top at 220℃, bottom at 200℃, about 50 minutes.
