Easy Multicereal Toast

All ingredients

Bread flour 700g
Water 480g
Yeast 15g
Salt 10g
Sugar 80g
Egg 150g
Puratos Easy Multicereal 300g
S 500 10g
Aristo all purpose 80g
Total bread weight 1825g

Recipe

  1. Mix all the ingredients (except Aristo) together at low speed then add the butter and mix at high speed until well developed.
  2. First fermentation: 20'.
  3. Divide, scale and mould round.
  4. Rest: 15'.
  5. Shape the dough piece into a toast mould.
  6. Final proofing: 100' at 38, 75%RH.
  7. Baking temperature: top at 220, bottom at 200, about 50 minutes.
