Puratos is a pioneer in the production and application of emulsifiers in bakery applications. Thanks to 50 years of improvement, our modern range responds to all the needs of today’s bakers and millers.

The Data ester is one of the backbones of Puratos standard improvers. Produced in-house since the late fifties, and further optimized over time, Puratos Datem (data esters) respond to the constant needs of bakers and millers: optimal performance, free flowing product and stability under high pressure and temperature.

But Puratos' range of bakery emulsifiers is larger than Datem alone. We manufacture and apply also distilled monoglycerides, SSL and specialised compounds. And our researchers continue to optimize production process to make our emulsifiers even more attractive. In recent years, we saw many opportunities in combining various types of emulsifiers to explore new synergies.
