Throughout the years, Puratos has gained large expertise intechnology, nutrition and sensory analysis. The company develops raw materials, products, and solutions for the preparation of bread, patisserie and chocolate products.  Exchanging knowledge, experience and opinions with its customers , academics and professionals from other domains has always been a desire of the company to develop together rich and innovative ideas.  For the first time this interesting exchange was organised under the concept of an Innovation and Nutrition Seminar for Asia at Puratos China at Guangzhou. 

 

New  ways to create value in baked goods through texture and nutrition

At this Seminar insights regarding global market and nutrition trends in bakery and patisserie were presented as well as technical information related to texture and nutrition in baked goods.

Participants heard how they could furtherimprove their cake texture, freshness and shelf life to obtain higher consumer appreciation even with cost recipe reduction. They participated in workshops on how to influence taste, texture and freshness in both fresh and packed bread to optimize consumer satisfaction. They exchanged their experience on how to avoid the classical problems with fillings such as water absorption or water migration and shared their knowledge about  the latest innovations in the area of Cream Fillings and Chocolate Fillings. Through a practical exercise participants of the seminar witnessed themselves how consumer preferences can be measured and analyzed.

 

Good turnout and positive feedback from leaders of the sector ask for next edition

A total of 10 countries and regions participated in the seminar, that was specially aimed at leaders of the food and bake industry of South East Asia's major countries, including Japan, China, South Korea, Malaysia, Indonesia, Philippines, Vietnam, Australia, Singapore and Taiwan. They sent a delegation of decision makers of in total 89 leading companies.  Because of the good turnout and the positive feedback of the participants, Puratos will certainly organize similar initiatives worldwide in the future.
